With the arrival of the Asian Luxury Hotels to Paris, like Shangri-la, Mandarim Oriental or the most recent The Peninsula, the historic Parisian hotels are making great renovations in order to keep and stimulate their costumers. One of those classic Hotels is Plaza Athénée in the high fashion Av. Montaigne, this hotel was were the master Alain Ducasse had his most important restaurant in Paris with 3 Michelin Stars.

With all the renovation of the Hotel and the lost of the 3 stars due to the closed doors, and with a vision that is his own, Ducasse breaks completely with the past and creates a new menu without meat, focusing in fish and seafood ( his great passion), vegetables and cereals to create a new and more sophisticated cuisine.

The Video for this week shows the process of creating this new restaurant, from the passion of his suppliers to the most sophisticated Parisian Design.
